Vegan Chocolate Cake

Honestly, I'm not a huge chocolate fan. Now, you might be asking, "What? You don't like chocolate???", well it's not that I don't like it, but I can only handle it if it's not super strong - anything over 50% cacao, and I just can't do it!

However, I'm not against a moist vegan chocolate cake like this one, I just didn't have a good recipe! I wanted something super easy, that you can whip up in 15 minutes and never get tired of. So, I've put together a super simple recipe with ingredients you likely already have in your cupboards (I'm sure of it ;-) ). I added a pinch of ground coffee, which is a tip I've seen everywhere lately, so I wanted to try it, but it's not mandatory, you know ;-)!

  • -dark chocolate 150 (g)
  • -plant-based margarine 60 (g)
  • -all-purpose flour 260 (g)
  • -cornstarch 40 (g)
  • -sugar 150 (g)
  • -soy milk 280 (mL)
  • -baking powder 1 (tsp)
  • -ground coffee 1 (pinch)

  • Preheat the oven to 340°F.
  • Melt the chocolate and margarine in the microwave.
  • Mix the flour, sugar, cornstarch, baking powder, and coffee in a mixing bowl.
  • Add the soy milk while whisking. Then, finish with the chocolate-margarine mixture.
  • Grease a cake pan with a little margarine. Pour the batter into the pan.
  • Bake for approximately 30 minutes. To check if it's cooked, insert a knife blade into the center; it should come out clean (without any cake batter on it). Enjoy! :)
