Wok of cereal with vegetables

Imagine: it's been a week since you've had the time to go grocery shopping (or you've been too lazy) and now you're opening your fridge to see what old forgotten leftovers you might possibly eat tonight. You have a poor raw zucchini, a wilted green pepper in the back left corner (because you don't even know why you bought it, green peppers are useless, they're not as good as red ones so... they shouldn't exist! Who invented green peppers?). In your cupboards, it's not much better: 3 and a half grams of coral lentils, barely more quinoa and an old package of pasta (everyone always has pasta! Because you never know...) In short! Not enough to make a super stylish dish and brag about it on Instagram...

But Éline's table is here for you! Yes, you there ;-) ! And the following recipe consists of optimizing your pantry leftovers in a great wok, and it's also full of different grains and legumes to do good things for your little body!

  • -bell pepper 1
  • -tomatoes 2
  • -quinoa 50 (g)
  • -bulgur 40 (g)
  • -short pasta 50 (g)
  • -coral lentils 30 (g)
  • -soy sauce 2 (tbsp)
  • -salt
  • -pepper
  • -olive oil

  • Prepare a pot of cold water with coarse salt, quinoa, and bulgur. Heat the pot. When the water boils, add the pasta, continuing to cook for the time indicated on your pasta package. Add the coral lentils 8 minutes before the end of cooking.
  • Clean your vegetables. Using a vegetable peeler, slice the zucchini into ribbons. Cut the bell peppers and tomatoes into thin strips.
  • With a little olive oil, sauté the vegetables in a pan for about 10 minutes on high heat. Add the dates and the mixture of pasta, lentils, and cereals. Add the soy sauce and a bit of pepper. There you go :) !
